Ingredients

  • 1 head cauliflower
  • 1 bunch of parsley
  • 1 onion
  • 1 capsicum
  • 2 eggs
  • 1 cup grated cheddar
  • 1 cup grated parmesan
  • 1/2 cup passata
  • 300g bacon bits
  • 500g beef mince

Method

  1. Preheat oven 220ºC.
  2. Remove stalks from cauliflower and blend in food processor or grate finely.
  3. Combine with 2 eggs, parmesan, salt and pepper.
  4. Line a baking tray with baking paper and press mixture out.
  5. Blot paper towels over the top to absorb excess water.
  6. Cook crust for 20-30 mins watching it doesn’t burn.
  7. Cook bacon and mince.
  8. Dice onion, capsicum and parsley finely.
  9. When crust has cooked add a layer of passata.
  10. Add the bacon, mince, onion, capsicum and cheddar.
  11. Bake 10 mins.
  12. Garnish with parsley.
