Scrambled eggs

Ingredients

  • 1/2 avocado
  • 140g baby spinach
  • 1 tbsp butter
  • 100g bacon bits
  • 2 eggs
  • 1/4 capsicum
  • 1/4 cup cheddar cheese

Method

  1. Bring a saucepan of water to the boil.
  2. Cook bacon in 1/2 the butter.
  3. Slice capsicum and mix with eggs and cheese in a bowl.
  4. Add to pan with bacon and turn down to low.
  5. Cook for a futher couple of minutes.
  6. Boil spinach for 1 minute and drain well.
  7. Serve eggs with avocado and add other 1/2 of butter on top of spinach.
